Healthy Lunch Idea

Did anyone see the part on the Today show about the beagles rescued from Spain? They were being used and abused in an animal research lab. It was heart breaking to see them step on to grass for the first time. It was so sad…I got to go to a happy place so I don’t cry and think about these guys instead.
My friend Penny sent me this hilarious link and it makes me smile every time. I thought I would be able to recreate this scene given that pugs > basset hounds in fat rolls.
Turns out I failed, but I do appreciate a pug with rabbit-like ears.
I am thankful to not have any Thanksgiving leftovers to tempt me today, so that I can keep my rolls at bay. With the heavy meal behind me, I wanted to start out with some healthy lunches to get me back on track.
I am always running late in the morning, so I like to have everything ready to go. This means I usually shop on Sunday and get everything prepped so I can just grab and go. Here is what I bought to make my lunch spin:
I start out by chopping the romaine lettuce and filling five bowls.
Then I add some shredded cabbage for some crunch.
I top the salad with some green onions and chickpeas to add some protein.
Then I mix in some cherry tomatoes and avocado.
I store the salads in glass containers to try and avoid as much BPA contact as possible. I usually wait to add the dressing until the morning to keep the lettuce from getting soggy. Then before work, I will add salt, pepper, lemon juice, and olive oil.
I love this simple salad because it is dairy-free, full of fiber, and has a good amount of protein to keep me from getting hungry in the afternoons.
