Blue Cheese Pear Pizza

I love spending the weekend after Thanksgiving getting ready for Christmas! At the same time, I cannot bring myself to break out the decorations any sooner, but I do wish that I could be more prepared for sending out our holiday cards.

It usually takes me awhile to get the perfect picture. I am pretty bad about getting the camera timer to give us enough time to get in the frame, so we end up with a lot of ghost-like pictures.

Chris thinks we take so many shots because I have not perfected the cheezy grin.

After fifty frames, we eventually get one that both of us laugh at enough to share with family and friends.

I am so far behind on even thinking about what we will send out this year. Sorry friends!

Tonight we are settling in and enjoying some blue cheese pear pizza. The first time I tasted these amazing flavors was at The Cheesecake Factory. It was on their appetizer menu, and it was the perfect portion for a restaurant meal. Sadly, they took it off their menu, so I knew I had to recreate my own version.

Blue Cheese Pear Pizza

Ingredients:

1 pizza crust

1/2 cup pesto

2 thinly sliced pears

1/2 cup chopped walnuts

1/2 cup blue cheese

1 cup chopped spinach

1/2 teaspoon red wine vinegar

1/2 teaspoon olive oil

1/2 teaspoon lemon juice

Directions:

1. Pre-heat oven to 450 degrees. Spread pesto on top of pizza crust.

2. Layer pears on pizza.

3. Sprinkle walnuts and blue cheese over the top. Keep about two tablespoons to spread on later.

4. Bake pizza for 8 to 10 minutes. Mix spinach, vinegar, olive oil and lemon juice together.

5. Take pizza out of the oven and add spinach to middle section of pizza and remaining blue cheese.

Slice and enjoy!
