Three Bean Chili

A systemic cleansing and detox is definitely the way to go after each holiday. It is the key to fighting high blood pressure, heart disease, cancer, and other health-related illnesses.

Okay Lee Haney, why not? So after eating way too much cheese and other Thanksgiving classics, I decided to do a week long detox. The last time I went on a detox it drove Chris to eat a five-pound burger for a free t-shirt.

Sadly, I did not get to witness this event since he was in Wyoming on a work trip, but he does have the t-shirt to prove it. Apparently, it took him seventeen minutes to finish this. Maybe that is why I go on so many cleanses…

This is my game plan. I am following an anti-inflammatory diet, and might even try and eat strictly vegan too. Here is what I am restricting:

Dairy, caffeine, gluten, corn, sugar, artificial sweeteners, oils, citrus fruits, peanuts, red meat, and alcohol.

It is a very challenging list, but it is only for two weeks…and I get to eat this:

Three Bean Chili

Ingredients:

1 medium onion chopped

1 teaspoon olive oil

1 can kidney beans

1 can black beans

1 can pinto or chili beans

1 tablespoon minced garlic

2 cans (14 1/2 ounces) undrained diced tomatoes

1 can (15 ounces) tomato sauce

2 tablespoon chili powder

1 1/2 teaspoons  ground cumin

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon red pepper

Directions:

1. Heat olive oil over medium heat and brown onion.

2. Drain and rinse beans.

3. Add all ingredients into crock pot.

4. Mix

5. Cook on low heat for 8 to 10 hours.

6. Enjoy!

Since I couldn’t add creamy cheese and sour cream, I substituted avocado. Yum!

Then I used nut thins in place of chips or crackers.

They are crunchalicious and gluten-free. Perfect with Three Bean Chili.

So far I haven’t had to sacrifice taste for this detox. We’ll see how that turns out.
