Cranberry Balsamic Salad Dressing

Well I made it home in time to catch the new episode of Whitney. Chris and I attended a Christmas party tonight for his young leadership group. Apparently I must always use my cell phone versus my watch to tell time these days, but today was different.

I checked my watch to see what time it was and was shocked to see it was already nine, so we decided it was time to head home. It was weird because when I got home my watch read this:

Unfortunately, the real-time was 8:23. Whoops!

I knew that there probably wouldn’t be much detox friendly food at the party tonight, so I opted to have a salad before we went. I wanted to use up some leftover cranberries, so I came up with a pretty tasty little number.

Cranberry Balsamic Salad Dressing

Ingredients:

1/2 cup cranberries

1/2 cup balsamic vinegar

1 cup canola oil

1 cup chopped red onion

1 tablespoon Dijon mustard

2 tablespoons agave nectar or sugar

Directions:

1. Add cranberries, vinegar, onion, mustard and agave nectar to food processor.

2. Blend and slowly add oil.

Done! That’s it. I served mine with some toasted walnuts, spinach, and blue cheese for Chris.

This dressing it so good! I might try to marinate some salmon with it and serve it on top. Yummy!

It was so tasty that it almost made up for the fact that I skipped this…

I am glad we went though because I met a fellow blogger and Chris and his classmates had to wear these all night…
