I’m doing the happy dance right now as I type.

Besides being over joyed by my new status in the blogging world, I’m really pumped about the introduction of a few P90X workouts into my weekly routine. By pumped I mean super sore. I went ahead and got my third round of measles vaccinations today (keeping my fingers crossed that I finally am immune). I couldn’t tell if it was the shot that was making my arm hurt so badly or the crazy amount of push-ups I had done. Either way, I am one sore lump of a human being today.

My side’s page was lacking to say the least, so today I wanted to add one of my personal favorites.

Four Cheese Cauliflower

Servings: 8

Ingredients:

1 Tablespoon flour (I used whole-wheat)

1 cup skim milk

2 Tablespoons shredded Fontina cheese

2 Tablespoons shredded 2% cheddar cheese

2 Tablespoons shredded part-skim mozzarella cheese

2 Tablespoons shredded Parmesan cheese

½ teaspoon salt

½ teaspoon pepper

1 head cauliflower

parsley to garnish

Directions:

1. In medium skillet, add flour and cook over medium-high heat. Slowly mix in the milk, constantly stirring for about three minutes. Remove from heat.

2. Slowly add in the cheeses, salt, and pepper, while continuing to stir until mixed thoroughly. Keep warm.

3. Bring water to a boil in a steamer. Steam chopped cauliflower for four to five minutes.

4. Drizzle cheese mixture over steamed cauliflower.

 

5. Enjoy!

I am such a carb-o-holic that I really needed some low-carb dishes. This is perfect! Cauliflower is so filling and the protein in the cheese really makes this a side dish staple.

As I was making this dish, the cheese mixture reminded me of a version of homemade mac and cheese, but when using it to top cauliflower it saves so many calories. That is exactly what I need!

I mean look at how cheesy it is…
