Spicy Pineapple Shrimp

Football ranks somewhere in the middle on my hierarchy of entertainment, and college football would be way above professional. Now when it comes to tailgating verses Super Bowl commercials, I am really not sure which I prefer more.

Laughing is one of my favorite things to do, and the commercial that made me laugh the hardest last year was the Volkswagen’s “Mini Darth Vader.” Well Volkswagen has won me over again this year. I saw a clip of “The Dog Strikes Back,” and I cannot stop laughing thinking about that dog climbing up and down the stairs to drop a few pounds, in order to catch the new Volkswagen. Hilarious!

Nellie would absolutely do the same thing in order to catch an ice cream truck passing out free treats, but instead she usually just sits by my feet knowing that I will inevitably drop something….like a Super Bowl goodie such as…

Spicy Pineapple Shrimp

Ingredients:

1 Pineapple, cubbed

1 pound bad medium shrimp, peeled and deveined

1 teaspoon chili powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon sugar

1/2 teaspoon onion powder

1/2 teaspoon red pepper flakes

1 tablespoon olive oil

1 Tablespoon minced garlic

2 green onions, chopped

toothpicks

Directions:

1. Combine chili powder, oregano, salt, sugar, onion powder, and red pepper flakes in bowl. Toss shrimp until coated.

2. Add oil to skillet and heat over medium heat. Add garlic and onions and cook for about a minute.

3. Cook shrimp for 4 to 5 minutes, turning half way through.

4. Place piece of pineapple and shrimp on a toothpick.

5. Enjoy!

Sweet and savory is my favorite combo, and this appetizer is just that.

Plus anything you can grab and eat is perfect for a Super Bowl party.

This is something I would not want to leave off my party table.

It is simply amazing.
