Healthy Mint Oreo Shake

Even the darkest night will end and the sun will rise.

VICTOR HUGO; LES MISERABLES

Sometimes I think Nellie feels like she is the ugly stepsister to Doug.

Because when the opportunity arises, she is out of here. The 19 mph wind gust blew our gate open today, and I did not notice when I let Nellie out. Thirty minutes later she was gone. Being the control freak that I am, I had a melt down when I realized my baby was missing.

By the time I had put on my shoes and called Chris crying, a sweet neighbor called to let me know that they had her. She had made it one block up the street to the house with two pugs. I guess she just wanted to see her people.

After the disappearing dog dilemma, I needed a sweet treat to calm my nerves. To celebrate 100 years of Oreos, I made…

Healthy Mint Oreo Shake

4 servings with 200 calories a piece

Ingredients:

4 Cool Mint Oreos

½ cup Greek yogurt

2 cups Blue Bunny No Sugar Added Mint Chocolate Chip Ice Cream

1 cup unsweetened almond milk

Directions:

1. Add all ingredients to blender.

2. Mix together.

3. Chop two Oreos to use as garnish (optional)

4. Enjoy!

There s something about a mint dessert that is so satisfying. It cleanses my palate, so I am not tempted to keep eating.

With the light ice cream, yogurt and almond milk this shake has a fraction of the calories, but it still has the same great taste.

This is the perfect shake to serve in celebration of St. Patrick’s Day!

Did you celebrate Oreo’s birthday today?
