Apple Turkey Quesadillas
Sometimes, two people have to fall apart to realize how much they need to fall back together.

Each year in Manhattan, KS one of the radio stations sponsors a scavenger hunt with a grand prize. Day by day they would release more clues about where the prize was hidden. Working at a bank, I always heard people’s theories on where they thought it was located.
One year I was convinced I knew the exact spot, so I got Chris to go look for it. We had the right location, and he was one of the first people to head out there (in the middle of a winter snow storm). Unfortunately, two days later someone else found it. We did not really mind because we had found something even better…a hiking trail that you could take your dogs on.
We had been hiking the Konza Prairie for a while, but we always wished that we could take our dog along. Finding a location where we could do just that was worth its weight in gold. Any nice day we got we headed out there. Man I miss that trail. It would have been perfect on a day like today.
I guess I will just have to settle on my back patio instead. Being that it is 3.14.12, I wanted to jump on the Pi(e) celebration.

Apple Turkey Quesadillas
Ingredients:
Whole-Wheat Tortillas
Gala Apples
Deli Turkey
Pepper jack cheese
Cheddar Cheese
Sweet Hot Mustard
Olive Oil
Directions:
1. Thinly slice apples (thinner than what is shown here).
2. Heat skillet on medium. Spray tortilla with oil.
3. Layer cheese on top.
4. Cover one side with turkey.
5. Place apples on top. Continue cooking until cheese is melted.
6. Fold in half and enjoy!
My amazing neighbor, Sarah, shared this idea with me. She has been making a variation with smoked mozzarella, but I could not resist trying a quesadilla with the turkey apple combination.
It was just as delicious as it sounded. The crisp apple was the key to this over-the-top creation.
Cheesy quesadillas are so good on their own, but the addition of apple and sweet hot mustard was a game changer. These are truly marvelous!
