Nellie would, and I enjoy winning as well. It does not happen much when I am going up against my monster husband. That is why when I pulled ahead on Halfbrick Fruit Ninja I knew that I had to keep the lead.

Spicy Cornflake Chicken

This was another recommendation from my co-worker, Adam. Man that boy must eat well at home!

Ingredients:

4 cups Cornflakes

1 cup buttermilk

1 egg

½ teaspoon salt

2 Tablespoons crushed red pepper

6 halved chicken breast

Directions:

1. Pre-heat over to 350 degrees. Pour cereal into a bowl and crush.

2. Combine milk, salt, and egg in a bowl.

3. Dip chicken breast in milk mixture.

4. Cover in Cornflakes and place on greased baking sheet.

5. Sprinkle red pepper on top.

6. Bake for one hour.

7. Enjoy!

Grilled chicken breast is good, but it is so much better with a crispy crust….that is not fried skin.

I also enjoyed the spice from the red pepper.

Crunchy flakes on the outside and juicy melt in your mouth chicken on the inside. Sounds about right.

If it were Frosted Flakes, it would be grrrreat! Actually, I think the Cornflakes worked much better. I just love incorporating cereal into my dinner.

What a wonderful no fuss dinner!
