Kashi Diet – Day 2

Bring your fears to light so you can loosen their hold over you. Fears, real or imagined, only impede you. Banish them so that you may learn the lesson of courage and create the life you desire.

Holy Fiber Moly! It’s Day 2 of my Kashi Diet and I am feeling the love. I have to admit I really enjoyed all the products I tried yesterday, but today they got even better! Here is what I devoured today…

Breakfast – Indigo Morning Cereal

The cereal consisted of Organic Crispy Whole Corn Flakes with Dark Berries.

Even though it was loaded with berries, I went ahead and added my own blueberries on top. It was berrylicious!

Lunch – Chicken Pasta Pomodoro

Grilled Chicken Breast with Red Peppers, Yellow Summer Squash & Zucchini, Kashi 7 Whole Grain Penne Pasta with Tomato, Garlic & Basil Sauce.

I was really surprised by how fresh the chicken and vegetables tasted in this dish. If I hadn’t known, I never would have guessed it was a frozen entrée.

Snack – Original Whole Grain Crackers

These could totally pass for Triscuits, but they are way healthier with less fact and a lot less sodium.

…and they have more fiber, naturally with all the whole grains.

Dinner – Sesame Chicken

Natural White Chicken with Edamame, Carrots, Red Pepper & Roasted Green Beans in a Spicy Citrus Sesame Sauce with Kashi 7 Whole Grins & Sesame Pilaf.

With frozen food, entrees end up with a mushy texture after heating. This dish was nothing but fresh and crunchy with the crisp vegetables and nutty whole grains.

So far my favorite dishes have contained the signature Kashi Pilaf. I can’t get enough of that stuff.

Dessert – Oatmeal Dark Chocolate Soft-Baked Cookies

I splurged tonight and tried some of the Kashi cookies. I guess when you’re getting so many great grains it’s not really a splurge as much as it is a smart decision.

They would satisfy my sweet tooth any day!
