Kashi Diet – Day 3

The food you eat can be either the safest and most powerful form of medicine or the slowest form of poison.

Onto Day 3 of my Kashi Diet and things are going really well. Healthy food comes with a cost. The frozen meals were around $3.00 a piece, but that is comparable to other leading frozen meal brands. The benefit of Kashi is that they use organic, whole grain foods in their products. Plus they also taste very fresh. Here is what I had today…

Breakfast – Blueberry Waffles

I had blueberry waffles topped with blueberry syrup and blueberries for breakfast.

If I was one of the children from the Willy Wanka and the Chocolate Factory movie, I would become a blueberry this morning, but I don’t care because it was sooo good!

Lunch – Spicy Black Bean Enchilada

Red Skinned Potatoes, Black Beans, Roasted Red Pepper, Roasted Corn & Spinach in a corn & Kashi 7 Whole Grain Tortilla, Side of Bulgur and Kashi 7 Whole Grains & Sesame Pilaf with Vegetables.

Both enchilada options have been so good that I can’t pick which one I liked better. I loved the sauce on the chicken enchilada, but I think the black bean enchilada itself was better and brought some heat with it.

Snack – Ripe Strawberry Cereal Bar

This cereal bar was very similar to Nutri Grains Strawberry Cereal Bar. In fact, when it came down to calories, fat, and protein they both came out the same, but the Kashi bar had one more gram of fiber and two less grams of sugar.

I think we have a winner!

Dinner – Pesto Pasta Primavera

Yellow Carrots, Sweet Red Peppers & Peas, Kashi 7 Whole Grain Penne Pasta, Basil Pesto Sauce with Shredded Parmesan Cheese.

I have to be honest. This was not my favorite of the entrée choices. It might be because I prefer my homemade pesto, but I also wasn’t crazy about the mixture with peas and red peppers.

The great thing about their pasta entrees is that the whole-wheat pasta they use is remarkable. They also give you so much volume with the loaded veggies, such as the yellow carrots.
