Reunited and it feels so good! Okay, waking up at 5:00 a.m. to let my dogs out doesn’t really make me happy, but it is nice to have the little scoundrels back after their two-week stay in Kansas.
My hormones have been running on high, and I pretty much miss anything and everything. One thing that tops the list would have to be adult beverages. It is so strange from going from having a glass a wine a night to cold turkey. Plus there is something about cold beer that makes the soaring summer temps bearable.
After spending a week in Mexico, where liquor flows like water, I was dying to have a margarita. Being the dutiful pregnant woman I am, I settle on some…
Margarita Cake
Ingredients:
1 box yellow cake mix
1 cup margarita mix
1/3 cup oil
3 eggs
Icing:
1 cup powdered sugar
¼ cup margarita mix
Directions:
1. Preheat oven to 350 degrees. Combine cake mix, oil, eggs, and margarita mix.
2. Pour in greased Bundt pan and bake for 40 minutes.
3. Make icing by stirring together powdered sugar and margarita mix.
4. Drizzle over cake.
5. Enjoy!
Let me tell you. This cake is quite possible better than the real thing. It is so moist and bursting with super sweet yet tart flavors.
For all those pregnant women who would consider alcohol to be one of the things they miss the most, this is your cure all fix.
This cake is cause for celebration! It’s too bad that Cinco de Mayo is so far away because this cake would liven up any party.
