Mushroom and Scallion Quiche

There are so many decisions made in your life that you have no control over. These changes can impact your life, as you know it. This week one of those decisions will be made for me, whether we are blessed with a baby boy or girl. The gender will be revealed this weekend with family and friends, but the anticipation of getting there is killing me. Needless to say I am over-the-top excited for everyone to find out!
I don’t know what Chris is more excited about, finding out our firstborn’s gender or this quiche I made for dinner.
Mushroom and Scallion Quiche
Ingredients:
1 (8 ounce) container mushrooms, sliced
12 green onions, sliced
1 Tablespoons olive oil
8 eggs
½ cup milk
¼ teaspoon salt
¼ teaspoon pepper
2 cups Italian blend cheese
2 piecrusts
Directions:
1. Preheat oven to 350 degrees. Heat olive oil in skillet over medium heat. Add mushroom and onions, and sauté for 10 minutes.
2. Mix together egg, milk, salt and pepper.
3. Sprinkle ½ cup cheese into each piecrust.
4. Top with cooked veggies.
5. Pour egg mixture over the top of each pie.
6. Cover with remaining cheese.
7. Place pies on baking sheet and bake for 30 minutes.
8. Enjoy!
This quiche is packed with vegetables, and the onions add such an amazing flavor throughout the dish. The melted cheese on top doesn’t hurt.
Whenever I see quiche on a menu, I am all over it. It really is the perfect choice for breakfast, lunch, or dinner. I’m holding myself back from eating leftovers at every meal.
Chris does not use foul language, but for some reason this dish left him cursing with pleasure. I guess it was so good that he couldn’t help himself.
I have to admit, flaky crust and a savory filling make me super happy too!
