Ranch Potatoes

It is scary how a memory or experience can pop into my mind and I become fixated on it. Last night it was of delicious ranch seasoned fries my roommate Abby (the cute pregnant girl I mentioned here) used to order at Old Chicago restaurant. I am definitely one to dip my regular fries in ranch dressing, so I cannot believe it never occurred to me to just go straight for the seasoning.

A massive craving for Ranch Fries hit, and after stepping on the scale yesterday, I needed a healthier option.

Ranch Potatoes

Ingredients:

10 small red potatoes

¼ cup olive oil

1 packet Hidden Valley Ranch Seasoning

Directions:

1. Preheat oven to 450 degrees. Wash potatoes and cut them into small chunks.

2. In a large bag, combine potatoes and olive oil.

3. Mix in seasoning.

4. On a greased baking sheet, cook potatoes for 35-40 minutes.

5. Enjoy!

The heavenly combination of potatoes and ranch seasoning did not disappoint. I might even like this version more than the real thing.

Usually the only way I will eat potatoes is if they are smothered in ketchup…that is until I met Ranch Potatoes. These babies are perfectly seasoned to please any takers.

With football season rolling in, these are the perfect side dish for any cook out!
