Nordstrom Anniversary Sale, you got me again this year with your magnificent prices on brand new items. Some would like to refer to this sale as Christmas in July because it really is a miracle when you can find designer jeans and drool worthy jewelry at a fraction of the original price.

Luckily for me they extend their sale to the online market, because I found out from a dear friend that worked at Nordstrom, that it isn’t likely we will see one in Oklahoma City anytime soon.

Blueberry Banana Bread

Ingredients:

3 bananas

½ cup brown sugar

½ cup cane sugar

½ cup butter

1 egg

1 teaspoon vanilla

1 teaspoon baking soda

½ teaspoon salt

1 ½ cups flour

1 cup blueberries

Directions:

1. Preheat oven to 350 degrees. Mix together bananas, sugar, butter, egg, vanilla, baking soda, and salt.

2. Slowly beat in flour.

3. Fold in blueberries.

4. Pour in greased bread pan. Bake for one hour.

5. Enjoy!

When choosing my favorite muffin it is a toss up between Blueberry and Banana, so I wanted to combine my favorite flavors into one giant loaf of heavenly bread.

Each bite is bursting with berries and smooth, creamy banana. I couldn’t ask for a better treat…unless my husband surprised me with one of the Kate Spade necklaces.

This bread was so perfect by itself I even omitted a serving of warm butter on top. Delicious!

Vegan Peanut Butter Banana Bread

By now my co-workers are fully aware of the benefits of working with a food blogger.

After enjoying Blueberry Crumb Cake at the last office meeting, my boss let on that he loves anything with bananas and peanut butter. I think we had all already caught on to this fact after watching him eat peanut butter by the spoonful.

I decided I needed something quick and easy to make in the morning before work, so I went back to my Chocolate Chip Banana Bread and did some tweaking for…

Vegan Peanut Butter Banana Bread

Ingredients:

2 Tablespoons Chia Seeds (plus ¼ cup water)

1 1/2 cups flour

1/2 cup cane sugar

1/2 cup brown sugar

2 teaspoons baking powder

1 teaspoon salt

3 bananas

1 cup peanut butter

1 teaspoon vanilla

1/2 cup unsweetened almond milk

Directions:

1. Pre-heat oven to 350 degrees. For an egg replacement, mix Chia Seeds with water and let set for a few minutes.

2. Mix the dry ingredients of flour, sugars, salt, and baking powder together.

3. Combine bananas, peanut butter, and vanilla. Then stir in Chia Seeds.

4. The mixture was fairly dense, so I added in some almond milk.

5. Slowly combine the dry ingredients.

6. Add mixture to greased pan and bake for an hour.

7. Enjoy!

I love when sweet breads having a gooey center. With both peanut butter and bananas, you are sure to have this desired effect.

After baking for an hour, the crust came out nice and crispy, making each piece a perfect combination of sticky crunch.

I plated the bread up and took the warm pieces right into work. Hopefully, my co-workers do not mind the healthy substitute of vegan bread. For 342 calories a slice, it makes for a filling breakfast.

What is nice about ditching the eggs is you can lick the batter right from the beater…if you are into that kind of thing.

I think I will be leaving out the eggs and butter from now on in the baking department.

Chocolate Chip Banana Bread

When friends make a trip down to Oklahoma City to visit, it makes me so happy! Three special ladies are heading down this weekend to watch KSU in the Cotton Bowl. We thought about making the extra trip down to Dallas, but we were kind of late getting tickets. Plus where ever these girls go, fun is sure to follow.

Our friendship began when I moved to Manhattan after college. I lived with two out of the four girls, but we were all inseparable during our time there. Even though I typically cheer for KU, I grew up loving KSU football, and these girls take Wildcat sports very seriously.

To get ready for their arrival, I wanted to prep some goodies to eat while they are down here.

Chocolate Chip Banana Bread

Ingredients:

4 bananas

1 1/2 cups flour (I used whole wheat)

1/2 cup brown sugar

1/2 cup cane sugar

1/2 cup butter

1 egg

1 teaspoon vanilla

1 teaspoon baking soda

pinch of salt

1/2 cup chopped walnuts

1/2 cup semi-sweet chocolate chips

Directions: 

1. Pre-heat oven to 350 degrees. Melt butter.

2. Place banana and butter in a large mixing bowl.

3. Add sugar, vanilla, egg, and baking soda.

4. Mix in flour. Throw in a pinch of salt and stir ingredients together.

5. Fold in chopped walnuts and chocolate chips.

6. Pour into a greased bread pan and bake for one hour.

7. Enjoy!

I just love the addition of chocolate chips to this bread. It’s delicious without them, but such a treat when they’re included.

Cream cheese spread on top of the bread is so yummy! It also helps keep the bread together when you use wheat flour, which tends to fall apart more easily. I can’t wait to enjoy this treat with my friends this weekend. There will be lots of pictures to follow.
