Doritos Taco Salad

I fell off The American Idol bandwagon a few years ago, and I have not really gotten into any other music competition show. That is until The Voice came around last year. Naturally I am going to watch a show that involves Adam Levine and Blake Shelton. What a great combination of hot men!

But really I just liked the concept of choosing the contestants based on their voice instead of their appearance. I think that is why they invited Christina Aguilera to be a judge…because that woman can sing.

Chris has been jonesing for Taco Bell (he likes Taco Bell as much as Christina likes her boobs), so I thought about picking him up some of the Doritos Locos Tacos. Instead I figured I would make my own spin of…

Doritos Taco Salad

Ingredients:

1 pound hamburger

1 packet taco seasoning

1 bag Doritos Nacho Cheese

lettuce

tomato

cheese

Directions:

1. Cook beef and add seasoning.

2. Layer Doritos on bottom of bowl.

3. Top with lettuce and meat.

4. Add desired toppings.

5. Enjoy!

Nacho Cheese Doritos are key to making the best taco salad ever! The more cheese the better. I like to use them in my vegetarian version with a Lean Cuisine Santa Fe-Style Beans & Rice instead of meat.

Instead of serving individually, you can toss everything in a big bowl for a easy family dinner.

This salad is nice because you can use the chips to eat it…

Or when it gets a little messing, just dig right in with a fork.

I wish I could find a Pug Bobblehead like the Taco Bell Chihuahua.

“Yo Queiro Taco Bell!”  Just pretend the green stuff is sour cream and not Shamrock Shake. He would make the perfect mascot.

After blogging for four months, I decided it was time to start a Facebook Page for Sally Spins. I have been posting on and off on my personal page about my favorite posts, but I like the idea of letting people decide if they want to be updated on what I am making each day. It is so convenient following blogs through Facebook because I can scroll through my News Feed to see which ones I want to read that day.

I also am ashamed to admit that I am new to the Twitter world. Facebook became a quick obsession for me in college, so you would think I would have been on the Twitter bandwagon as well. Nope…just started a few weeks ago. Boy was I missing out. I know more about Black Shelton and the Kardashian clan than I should admit. I also am partial to Eat This, Not That!, Foodbuzz, Cooking Light and Hungry Girl to keep up on healthy eating. Plus I can follow things happening in OKC. I feel so connected right now.

BLT Bites

Ingredients:

1 pound bacon

½ cup Greek yogurt

½ cup mayonnaise

1 carton cherry tomatoes

1 bag fresh spinach

Directions:

1. Cook bacon according to directions.

2. Cut tip off of tomatoes and scoop out the center.

3. Mix yogurt, mayonnaise, and bacon in bowl. Make sure to finely chop bacon (not like my pictures shows).

4. Put mixture in a Ziploc bag and cut off the tip to use for piping.

5. Fill tomatoes with mixture.

6. Wrap tomatoes with spinach leaf and secure with toothpick. Refrigerate for 30 minutes.

7. Enjoy!

These bites are bursting with flavor. They have a much more fresh taste than a real BLT.

I love the mix of the cold tomato with the savory filling. Yummy!

They are so colorful that they brighten up any party, and they are easy to make ahead of time.
