Are you ready for some football? What about a game day spread? Can you hardly wait the anticipation of some sweet commercials? Hmmm…yeah sounds about right.

In case there are any procrastinators out there like me, I wanted to share some easy super bowl recipes. Starting with…

Chipotle Raspberry Black Bean Dip: If there was one recipe I shared that is a must make, it would be this dip. I went straight to the source with this recreation, and it is better than ever! There is nothing else quite like the spicy, sweet flavors of this dip.

Buffalo Chicken Dip: This dip takes the mess right out of eating a wing, but has all the same flavors and more. I refer to it as Chris’ favorite dip because he cannot get enough of it.

Jalapeno Poppers: Bacon and jalapenos are football watching staples. These are a must make to spice your party up.

Mel’s Mexican Corn Dip: This recipe is my friend Mel’s go to thing to bring to a party. I love it because there is no work involved. Just toss some things together and you are done!

Spicy Southwest Egg Rolls: For some reason when appetizer comes to my mind I think of Chili’s Triple Play. I grew up in a small town. What? Specifically, I think of the wonderful goodness of the Southwest Egg Rolls. Yum!

Savory Sweet Chex Mix: A good thing can be made better than ever, just like this mix. When planning a party, it is always good to have something on hand for people to grab and munch on.

Buffalo Chicken Egg Rolls: If you like all things in an easy to eat roll. Try this version of the dip. It can be plopped right on to a plate and devoured right away. Score!

Margarita Flat Bread: Football, pizza, and beer all equal a true Super Bowl experience. This is a nice option for those looking for a lower calorie option.

Blue Cheese Spread: If you want something truly powerful with flavors choose this spread. I mean blue cheese, red onion, and garlic. Whoa…

Spicy Pineapple Shrimp: Need an eight minute recipe? Whip up these suckers. Easy to make. Easy to eat.

I could not narrow down which recipes I wanted to make, so I just decided I would make them all.

Kidding! I haven’t selected which recipes I’m officially making, except of course Chipotle Raspberry Black Bean Dip, and whatever this guy is craving.

Wish the rest of them were attending our watch party. I just love the fur lined coat and plaid. He’s so rustic.

To ring in the new year, I wanted to share my top eleven recipes for this year. Since I started my blog on 11/11/11, I thought the top eleven seemed fitting. From healthy lunch ideas, to indulgent Chipotle Raspberry Black Bean Dip, here are the most visited posts of 2011:

#11. Healthy Lunch Idea

This salad is so easy to prepare on Sunday and take to work all week. I love it because it is dairy-free, full of fiber, and has a good amount of protein to keep me from getting hungry in the afternoons.

#10. Bacon Wrapped Deer Tenderloin

Though I did not try the Bacon Wrapped Deer Tenderloin, my husband swears this marinade takes away a lot of the gamey flavor. Plus one can’t go wrong with anything wrapped in bacon.

Who doesn’t enjoy a good wrap? Spinach Wraps are so easy to whip up on a busy night, and they save well wrapped in Saran wrap for lunch the next day.

#8. 30 Second Salsa

Being the salsa fanatic that I am, it was hard to narrow down my favorite salsa. But any salsa that can be made in 30 seconds in my own kitchen, has got to be the best. I cannot get enough of this stuff. I put it on everything.

#7. Savory Sweet Chex Mix

Savory Sweet Chex Mix is like crack! Do not make it unless you plan to give most of it away. It is too good to have sitting around the house. The mix of savory garlic, sweet candy coated nuts, and heat of red pepper, is out of this world.

#6. Buffalo Chicken Dip

Buffalo Wings…good. Dip…good. Mixing the two…AMAZING! Buffalo Chicken Dip is such a crowd pleaser, and it is the perfect game day appetizer.

#5. Whole Wheat Spinach Gnocchi

It seems wrong to consider Whole Wheat Spinach Gnocchi a healthy food, when it is so darn cheesy. But for anyone wanting to shed some holiday pounds, this is the recipe to make.

#4. Blue Cheese Pear Pizza

One cannot go wrong with pizza, but when I want a really special treat, this is my go to thing to make. Crunchy nuts, crispy pears, and flavorful blue cheese all on top of a pizza, yes please!

#3. Spicy Southwest Egg Rolls

Everyone has been a Chili’s Bar and Grill, and hopefully they have tried the Southwest Egg Rolls. For any vegetarian, Spicy Southwest Egg Rolls are the perfect substitute, or anyone wanting to make their own version for that matter. Yummy!

#2. Spicy Shrimp

The Spicy Shrimp is really packing some heat. When I want to kick-start my metabolism this is what I reach for. I would totally recommend doubling this recipe because it is gone before I know it.

#1. Chipotle Raspberry Black Bean Dip 

Chipotle Raspberry Black Bean Dip, also known as Heaven on Earth, is by far my FAVORITE recipe. There is nothing out there quite like it. The smokey chipotle sauce make this dip stand above all others.

According to all the crazies out there, like my cashier at Whole Foods today, we have one year left. Let’s make it a good one. Here’s to 2012 and finding even more wonderful recipes to share!

Buffalo Chicken Egg Rolls

Happy Hunger Games! And may the odds be ever in your favor!

I was so pre-occupied with Chris’ marathon yesterday, I forgot to mention how I spent a large part of my weekend…finishing the Hunger Games. AMAZEBALLS!!!

So I went with my work friends to see Breaking Dawn on Saturday, and I was super excited to see it. At the same time, instead of focusing on the movie I kept wondering how the Hunger Games was going to end. The Hunger Games has surpassed my interest in the Twilight series. I left the theater and went straight home to finish the book.

Okay from start to finish it took me six days to finish, most of it being read on Saturday.  This is a really bad picture, but it shows the effort I took to show my devotion to the book.

I got so excited when I saw the movie poster for the Hunger Games, I had to take a picture. I heard at least 5 teenagers laugh at me while I took the pic but whatev. I can’t believe I have to wait until March to see the movie.

I had to make something quick tonight so I could put some attention towards the sequel Catching Fire. I decided to create my own spin on Buffalo Chicken Dip and made…

Buffalo Chicken Egg Rolls

Ingredients:

1 package egg roll wrappers

Buffalo Chicken Dip (pre-made recipe)

Directions:

1. Pre-heat over to 400 degrees. Place two tablespoons dip mixture on to egg roll wrapper.

2. Fold in corner of wrapper and two ends rolling towards remaining end. Moisten last corner and seal egg roll.

3. Place on baking sheet and bake for 8 – 10 minutes.

4. Serve with blue cheese dressing and enjoy!

Careful, these things go fast. The crispy egg rolls is so much easier to devour than the chip and dip.

These things are best served warm out of the oven, so if you plan on watching the bowl games at home, it’s perfect!

Instead I plan on picking from array of leftovers for dinner tonight. So much to pick from…and eat up too. Happy Monday Readers!

Buffalo Chicken Dip

Well today Chris reached a major goal of his and finished his second marathon. It was a personal best for him. He finished his first marathon in 3:47, and today he finished at 3:33.

He won a pretty sweet metal that can do this…

Chris ran in the Dallas White Rock Marathon. I assembled all of Chris’ favorite foods for him to enjoy after the race including:

Buffalo Chicken Dip

Ingredients:

4 chicken breasts

2 packaged cream cheese

1 (12 ounce) bottle wing sauce

1 cup blue cheese or ranch

1/2 cup chopped celery

1 cup shredded cheddar cheese

Directions:

1. Pre-heat over to 375 degrees. Cut chicken breast into cubes and cook over medium heat until cooked fully through.

2. Add cream cheese, blue cheese and celery to bowl and mix.

3. Stir in chicken and wing sauce.

4. Put into a 8×8 baking dish and spread shredded cheese on top.

5. Bake for twenty minutes until heated through.

Enjoy!

This is Chris’ favorite dip hands down. I will try a few bites sans chicken, but if there is anything Chris ever requests it is this dip! It is also the perfect appetizer for a bowl game viewing party…possibly while watching Kansas State University during the Cotton Bowl.
