I love winding down in the evening by zoning out in front of the television, and there are definitely shows that I hate to miss. I get really into a series in the first few years, but as time goes by they kind of lose their sparkle.
ABC’s Bachelor/ Bachelorette series is not one of those shows. For some reason I keep coming back. I was intrigued when they chose Emily Maynard to be the next contestant because, frankly, I thought it might be a snooze fest, but the girl is really opening up. Plus they are incorporating the Muppets, so of course I am going to tune in.
The first two episodes have really surprised me, so I can’t wait to see what else is in store. For more on tonight episode check out Time’s article here.

Caprese Sandwich
Ingredients:
3 tomatoes
8 ounces buffalo mozzarella
1 cup pesto
8 slices Italian bread
olive oil
salt and pepper
Directions:
1. Slice mozzarella and tomatoes. Lightly sprinkle tomatoes with salt and pepper.
2. Lightly mist on side of the bread with olive oil.
3. Even spread pesto on opposite side of bread.
4. Layer tomatoes and cheese on top.
5. Grill over stovetop or in Panini Press.
6. Enjoy!
If I could only eat one thing for the rest of my life, I might just choose a Caprese Salad. So tonight I wanted to wrap all the same flavors into a savory sandwich.
The Panini Press crisped the bread leaving a chewy center, which was the perfect shell for the oozing tomato mozzarella mixture.
I debated about using fresh basil leaves instead of the pesto, but I was so happy I choose the nutty sauce.
Nothing screams summer more than vine ripe tomatoes. You can count that I will be eating as much Caprese spins as possible.
