Slowly but surely I am getting the hang of switching to a self-hosted blog. After a month of trying to get a much needed Plugin to work, I finally figured it out today. Being a total computer dummy, it felt like such a huge accomplishment. Naturally I called Chris to tell him how excited I was, but all he said was “that’s nice.” No Chris, it is freakin’ amazing!
This leads me to believe that I need to make some blogging friends, who I can go to for help or talk to when I have a major break through…It’s the small victories people.
When I made the switch to a self-hosted site, I lost the 18 kind people who had signed up to follow my blog (lets be honest…they were probably all family). When I went home a few weeks ago my mom asked me why I stopped blogging. She assumed that since she no longer received the email that I was on a break. Nope, I was still blogging everyday in hopes of gaining readership, she just wasn’t reading.
Sooooo….after getting my Plugin to work, I now have an easy link for people to follow my blog!!! Yes, there is a button on the side panel, right below a Recent Post link. I bet my mom will be the first one to enroll.
The reason Chris probably didn’t demonstrate the enthusiasm I would have preferred was because he has been under the weather. To cheer him up, I decided to make him “his” favorite breakfast…
Cheesy Biscuit Breakfast Casserole
Ingredients:
1 pound ground turkey sausage
12 eggs
5 buttery biscuits
2 cups shredded cheddar cheese
salt and pepper, to taste
Directions:
1. Brown sausage over medium-high heat. Strain grease sausage and add to baking dish, sprayed with non-stick cooking spray.
2. Prepare biscuits as directed.
3. Scramble eggs over medium-high heat. Add to dish with sausage.
4. Tear biscuits into bite-sized pieces. Mix in with eggs and sausage.
5. Sprinkle cheese over the top. Turn on oven broiler and cook for five minutes or until cheese is melted.
6. Enjoy!
Chris loves a good breakfast sandwich. This casserole has all the main players as the sandwich, but it can be eaten with a fork!
Besides the fluffy eggs, the biscuits make this casserole even lighter. Just look at that mixture with all the cheese, biscuit, egg, and sausage!
This would be considered an indulgent breakfast, but I like to think the turkey sausage helps.
I surprised my man with some breakfast in bed. I threw in some sides packed with Vitamin C to help him kick this nasty cold.
Chris was so happy to have his favorite casserole all to himself, eating it for breakfast and dinner. I said it is his favorite!
It’s Bachelor time! Tonight there might be some skinny dipping, so drama is sure to follow. That model, Courtney, is super annoying. I’m routing for the Oklahoma girl and Kacie, the baton twirler.
