Chipotle Raspberry Black Bean Dip

Today was a sad day at work. It was our very talented bankers last day.
He decided to go into his family’s business, and we will miss him greatly. I will especially miss the recipes he shared with me, like this one and this one.
To show our appreciation we held food day at the bank, and I decided to bring one of my favorite dishes…in a crockpot.
Chipotle Raspberry Black Bean Dip
For the original recipe, click here. I kept everything pretty much the same, but I doubled the recipe and made it in a crockpot.
I started by heating the black beans and cream cheese on low heat.
While that heated, I sautéed the onion in a skillet.
I added the key ingredient Raspberry Chipotle Sauce to the pot.
Then topped the dip with the onions and shredded pepper jack cheese.

Hmm…It definitely does not look as appetizing as when I make it in the oven, but it has the same great taste.
I guess if you want to have a warm dip for a four-hour time spread you got to make some sacrifices.
