Strawberry Shortcake Sweetened with Agave Nectar

Ingredients:

Angel Food Cake

1 cup Strawberries, sliced

Whipped Cream

2 Tablespoons Agave Nectar

Directions:

1. Cut slice of Angel Food Cake. I took the easy route tonight with the store bought version.

2. Mix Agave Nectar and strawberries.

3. Top cake with ½ cup strawberries.

4. Layer whipped cream on top.

5. Enjoy!

Nothing beats fresh fruit in the summer time, and I plan on taking full advantage and eating as much as possible!

Angel Food Cake is light, fluffy, and low in calories. It is the perfect nightcap in my opinion.

I can’t wait to sit down and enjoy my sweet treat, keeping my fingers crossed for an even sweeter victory!

Noosa Yoghurt

I used to judge a movie by description alone, but after watching one to many duds, like Tower Heist, I have started to go with the more efficient choosing method of actual ratings. So far, it hasn’t failed me. Last night I watched We Bought a Zoo.

It was a really sweet story line, but it was also a tearjerker for sure. I loved every minute of it!

Dessert always goes nicely with movies, so tonight I cheated on my Chocolate Covered Banana Pops choosing Noosa’s Raspberry Yoghurt instead.

This is not your typical yoghurt. Each bite resembles a delicate cheesecake with fresh fruit. It is far cry from you typical bitter yoghurt.

There are two serving per container with 130 calories each, but I found myself being satisfied with only a bite of two because the yoghurt was so rich.

I selected the raspberry flavor, but the selection included blueberry, peach, mango, strawberry rhubard, and honey. I might have to buy one of each when I go back to the store.

Chocolate Covered Banana Pops

Chris found a little surprise in the yard while mowing tonight.

A little, baby bunny! It was so tiny, like the size of a tennis ball. I was instantly in love, and then I saw the rest of them hiding in the bush. A whole bunny family! It was too much to take. I needed a cool distraction. The perfect treat for a warm, summer day.

Chocolate Covered Banana Pops

Ingredients:

1 container Dolci Fruits Hard Chocolate Shell (or other variety)

4 to 5 bananas

10 Popsicle sticks

Directions:

1. Place a wax over a baking sheet. Prep banana by slicing them in half for easier dipping. Heat chocolate as directed.

2. Dunk banana in chocolate sauce, covering the whole piece.

3. Lay chocolate covered bananas on baking sheet.

4. Insert Popsicle stick into the banana at least half way.

5. Place bananas in fridge for 30 minutes to chill.

6. Wrap each pop in saran wrap.

7. Place in freezer bag.

8. Enjoy frozen pop!

Oklahoma gets insanely hot in the summertime, so these are the perfect treat to cool you off and give you a little potassium too. The frozen bananas creamy texture mimics an ice cream pop perfectly, but it cuts way back on the calories. Amazing!
