I am so jazzed up about this new snack I was introduced to. I was watching The Today Show and they had Lisa Lillien from Hungry-Girl.com on to share some of her favorite finds. Being as there are two hungry girls in our house, and two hungry boys for that matter, I had to tune in.

I am so glad I did because Lisa shared an amazing go-to snack she chooses.

Now you would think that this is more of a meal option, but I liked Lisa’s idea of picking more filling foods as snacks. I would pick a burrito over a granola bar any day.

I have to say for 190 calories, it fit right into my goal range of 150 -200 calories for an afternoon snack.

While browsing around the aisles at Sunflower Market, I spotted a selection of Evol products and knew I had to try Lisa’s recommendation.

After microwaving for a minute, I got to enjoy this…

The mixture of beans and cheese was super tasty, and it was full of protein to keep me full until dinner. I kind of felt guilty eating it as a snack because it was so big, but I got over it real quick.

I even got a little wild and dipped it into a mixture of Greek yogurt and salsa. I would totally recommend it.

Or if you would rather has a sweeter topping, mango salsa is pretty delish.

These are definitely on my grocery list for next week. I even wrote the suggestion down for my co-workers, only to discover that Evol is love backwards. It was quite fitting because I am totally in love with these guys.

BLT Bites

After blogging for four months, I decided it was time to start a Facebook Page for Sally Spins. I have been posting on and off on my personal page about my favorite posts, but I like the idea of letting people decide if they want to be updated on what I am making each day. It is so convenient following blogs through Facebook because I can scroll through my News Feed to see which ones I want to read that day.

I also am ashamed to admit that I am new to the Twitter world. Facebook became a quick obsession for me in college, so you would think I would have been on the Twitter bandwagon as well. Nope…just started a few weeks ago. Boy was I missing out. I know more about Black Shelton and the Kardashian clan than I should admit. I also am partial to Eat This, Not That!, Foodbuzz, Cooking Light and Hungry Girl to keep up on healthy eating. Plus I can follow things happening in OKC. I feel so connected right now.

BLT Bites

Ingredients:

1 pound bacon

½ cup Greek yogurt

½ cup mayonnaise

1 carton cherry tomatoes

1 bag fresh spinach

Directions:

1. Cook bacon according to directions.

2. Cut tip off of tomatoes and scoop out the center.

3. Mix yogurt, mayonnaise, and bacon in bowl. Make sure to finely chop bacon (not like my pictures shows).

4. Put mixture in a Ziploc bag and cut off the tip to use for piping.

5. Fill tomatoes with mixture.

6. Wrap tomatoes with spinach leaf and secure with toothpick. Refrigerate for 30 minutes.

7. Enjoy!

These bites are bursting with flavor. They have a much more fresh taste than a real BLT.

I love the mix of the cold tomato with the savory filling. Yummy!

They are so colorful that they brighten up any party, and they are easy to make ahead of time.
