Margarita Cake

Not all those who wander are lost.

J.R.R TOKIEN

Reunited and it feels so good! Okay, waking up at 5:00 a.m. to let my dogs out doesn’t really make me happy, but it is nice to have the little scoundrels back after their two-week stay in Kansas.

My hormones have been running on high, and I pretty much miss anything and everything. One thing that tops the list would have to be adult beverages. It is so strange from going from having a glass a wine a night to cold turkey. Plus there is something about cold beer that makes the soaring summer temps bearable.

After spending a week in Mexico, where liquor flows like water, I was dying to have a margarita. Being the dutiful pregnant woman I am, I settle on some…

Margarita Cake

Ingredients:

1 box yellow cake mix

1 cup margarita mix

1/3 cup oil

3 eggs

Icing:

1 cup powdered sugar

¼ cup margarita mix

Directions:

1. Preheat oven to 350 degrees. Combine cake mix, oil, eggs, and margarita mix.

2. Pour in greased Bundt pan and bake for 40 minutes.

3. Make icing by stirring together powdered sugar and margarita mix.

4. Drizzle over cake.

5. Enjoy!

Let me tell you. This cake is quite possible better than the real thing. It is so moist and bursting with super sweet yet tart flavors.

For all those pregnant women who would consider alcohol to be one of the things they miss the most, this is your cure all fix.

This cake is cause for celebration! It’s too bad that Cinco de Mayo is so far away because this cake would liven up any party.

What did you miss most while you were pregnant?

Summer Vacay

A vacation is having nothing to do and all day to do it in.

ROBERT ORBEN

You didn’t think I would just post one picture from my Mexico vacation did you? Even though this trip was drastically different from last years, going from Mai Tais to giant thighs, I still thoroughly enjoyed every minute of it. This was actually the first time I debated about spending more time in my room than on the beach.

With a porch that wrapped around with views of water on both sides, I was in heaven. Maybe the 80 degree temperatures helped too.

Naturally I couldn’t stay away from the water too long. They say pools are very therapeutic for pregnant women, and I would agree.

While I soaked in the rays, Chris did enough drinking for the both of us while competing in a beer chugging contest.

He blew the other contestants out of the water…pun intended. I’ve never been more proud!

The pool was nice, but the beach was amazing. I preferred to lounge there everyday, which worked out in my favor because I got to witness the hatching of a large group of sea turtles.

I divided my time between the beach and the spa, where I had the most spectacular pregnancy massage. I even was able to drag the boys along for some of the services.

I was ecstatic to find that the salon had my favorite summer nail polish color, OPI’s “The It Color.”

Since we were there over the 4th of July holiday, I probably should have chosen a more patriotic color, but I just couldn’t resist.

I was not sure if they would celebrate the American holiday in Mexico, but they went all out.

A huge buffet was set up for dinner, followed by a live band, and fireworks.

We decided to watch the show from our deck, and it was dazzling to see the fireworks against the ocean backdrop.

The Cancun Palace knew how to put on a good show. Another great performance we enjoyed while we were there was the Michael Jackson show. I can’t get enough of his music!

Who doesn’t enjoy a good Michael Jackson impersonation? Overall, it was such an incredible week, and I have to say it’s been awhile since I got to spend a whole week with my family. I’m so thankful to my dad and stepmother for making it possible.

I sure love my family, and I can’t wait to start my own.

Where is your favorite vacation spot?

Surprise!

A woman’s heart is a deep ocean of secrets.

GLORIA STUART

I am not very good at keeping secrets, and I have been keeping a couple from you. I feel so guilty, that I’m about to burst. The first is that I wasn’t in Oklahoma last week.

Crossing off #25 from my 30 Things To Do Before Turning 30 list, I went on a family vacation to Cancun, Mexico with my dad, step-mom, step-sisters, step-brother, brother, aunts, cousins, friends, and Chris. There were 14 of us all together, and I couldn’t have asked for a more fun or relaxing week!

Hopefully it’s obvious what my other secret is by the photo above, but if you must-ask…I’M PREGNANT!

Yes, I am holding a stick covered in urine in front of my face like a mustache. Doesn’t everyone get one of those shots when they find out??? Technically, I guess the first picture I captured was more like this…

Babies were off our radar with a bachelorette party, wedding, 10-year reunion, and trip to Mexico all scheduled, so I was quite surprised when I realized I was six weeks pregnant. Chris was just as surprised since he had been gone for two weeks the previous month. Call it a miraculous conception or what you wish, there is definitely a baby in there.

In six weeks it had grown from that little blip into a kiwi sized baby.

A kiwi sized baby that is moving constantly. I was overcome by joy watching my baby do somersaults in my stomach. I can’t stop smiling when I look at this precious leg.

How did Chris take the announcement? He was overcome with joy and happiness. I’m now walking proof of what a stud he is!

You might be wondering what this means for my little food and lifestyle blog. Well I can tell you things are going to get interesting, from the ever increasing growth of my belly to the bizarre things I have been eating, I plan to share it all. Stay tuned because it looks like #5 should be crossed on the list in early January.

Do you have any secrets you want to share?
