I figure life’s a gift and I don’t intend on wasting it. You don’t know what hand you’re gonna get dealt next. You learn to take life as it comes at you… to make each day count.

Happy St. Patrick’s Day everyone! This is such a fun day of the year with races, green beer, and all other green things. Our day did not quite start out like I would have hoped with a K-State win, but the green beer made up for it. Keeping my fingers crossed the rest of today’s games work out in my favor.

In celebration of St. Patrick’s Day, here are my favorite green recipes:

1. Healthy Mint Oreo Shake

2. Jalapeno Poppers

3. Spinach Wraps

4. Orange Sesame Kale Salad

5. Blue Cheese Pear Pizza

Or if you are going to be out all day and do not feel like making anything, a Shamrock Shake from McDonald’s can solve any of your problems.

Plus there is something about a seasonal menu item, that I just cannot get enough of…like Pumpkin Spice Lattes in October.

I figured this shake had to be loaded in calories just based on the amount of whip cream on top, so when in doubt…share with your dogs.

Just try not to let them get their whole head in the cup.

It makes for a sticky situation, but the mint flavoring does improve doggy breath.

Orange Sesame Kale Salad

Guess what today is….well it’s Christmas Eve, and my step-sister Allie’s birthday! Happy Birthday Al! She’s bringing a boy home for Christmas, so this will be pretty interesting:)

Chris can’t wait to give him the Awkward Hug. The one where he gets in real close and buries his face right into his neck. Then hold tight for a few minutes. This could get creepy. Not quite as creepy, as drinking with Santa at the bar last night.

Thankfully, when I woke up this morning my mom had decided to make us an enormous brunch filled with vitamin-packed foods to cure any long night out with friends. It included:

Cheese

Green Beans

Couscous

Turkey

and

Orange Sesame Kale Salad

Ingredients:

1 bunch kale

1/4 cup orange juice

1/4 cup apple cider vinegar

2 Tablespoons sugar

2 Tablespoons soy sauce

1 Tablespoon sesame oil

2 Tablespoons toasted almonds

1/4 cup pumpkin seeds

1/4 cup cranberries

1 Tablespoon crystalized ginger

Directions:

1. Cute kale into bite size pieces.

2. Whisk together orange juice, apple cider vinegar, sugar, soy sauce, and sesame oil.

3. Pour dressing on kale and mix in almonds, pumpkin seeds, cranberries, and ginger.

4. Enjoy!

I’ve never made anything with kale, but I will be making this salad again soon.
