Tomato Mozzarella Salad

Don’t be afraid of death; be afraid of an unlived life. You don’t have to live forever, you just have to live.

The weekend is coming to an end, and I miss my little nephew monkeys.

I miss reliving my youth hunting turtles by the pond.

I even miss the leftover Tomato Mozzarella Salad because it was so good.

I miss how easy it was to assemble. Mix one container cherry tomatoes halved, with ½ cup shredded basil, ½ teaspoon salt, and ¼ teaspoon pepper.

Top with one-package fresh mozzarella balls, four Tablespoons balsamic vinegar, and one Tablespoon olive oil.

That is it. It’s as easy as taking a trip down the slide.

I can’t wait until my next nephew visit…and the next time I make that salad.

What have you been missing lately?

Memorial Weekend

Be around the people you want to be like because you will be like the people you are around.

I feel like the luckiest girl in the world because I have had family come and visit the last three weekends. For the holiday weekend, Chris’ brother and his family made the trip down from Kansas City. The theme of the weekend was animals.

Our nephews climbed like monkeys on the play set.

For breakfast, we enjoyed some Monkey Bread from this Pillsbury recipe.

Next on our agenda was a trip to the Oklahoma City Zoo, where we saw monkeys from a far.

Then we got close and personal with the animals in the petting zoo.

Though, the exotic animals of the zoo stood no chance for the boys’ love of the doggies.

Now the slide was a different story.

Everyone made a few trips down the slide this weekend. If you want to feel young again, try hanging out two boys under the age of four.

What’s your favorite animal?
