Black Bean Burgers

We are all a little weird and life’s a little weird, and when we find someone whose weirdness is compatible with ours, we join up with them and fall in mutual weirdness and call it love.

Everyone has a favorite body part, and mine just happens to be my hands. Growing up I dreamed of becoming a hand model. The thoughts of lotion commercials, holding products at just the right angle for the perfect sell, or the dream job of being the hands holding the apple on the Twilight book just appealed to me. I have unusually large hands for a woman, so I thought that could only help when it came to holding a large container of orange juice.

My dreams were crushed when reality set in. I am way to accident prone to be a hand model.

What did I do to my hand? Is that a burn mark?

Knowing that realization, I turned to something I could put my hands to good use for….food blogging. I can easily sneak a finger or two into some shots, but sometimes the food speaks for itself like these…

Black Bean Burgers

Ingredients:

1 (15.25 ounce) can black beans

1 Tablespoon garlic, minced

2 teaspoons chili powder

1 teaspoon cumin

½ teaspoon salt

½ teaspoon pepper

¼ cup breadcrumbs

¼ cup quick oats

Directions:

1. In a food processor, combine beans, garlic, chili powder, cumin, salt, and pepper. Mix thoroughly.

2. Stir in breadcrumbs and oats.

3. Form mixture into patties.

4. Heat skillet, sprayed with non-stick cooking spray, on medium-low heat. Cook patty for 5 minutes on each side.

5. Enjoy!

These can be dressed up with any of your favorite burger toppings. I choose Dijon mustard, spinach, and some Wickles relish. Yum!

I opted to ditch the egg and keep these burgers totally vegan, and they held up really well without it.

They also keep really well, so you can make them all at once and easily heat them up for lunch later. Score!

I have tried many frozen black bean burger varieties, but this version is so much better. It is meatier and more filling compared to the compact frozen ones.

Sausage Sliders with Wickles Relish

Feelings are much like waves, we can’t stop them from coming but we can choose which one to surf.

Is it Monday or Tuesday? It feels like Monday, but I think it is definitely Tuesday. Sometimes I wish I could just push a pause button to stop time from flying by. I fully intended to break out my micro lens that I got for Christmas in, oh say, January, but this weekend was the first time it saw the daylight.

My mom researched all types of camera lens to find the perfect one to help me with my blog. How sweet is she? Being an untrained professional, the lens made me nervous. Insert my sister-in-law, Lindsey. She is a self-taught photographer, and she is amazing behind a camera. Within seconds she had my new lens attached and was taking the most amazing shots! Yippee!!!

The old lens was a better choice for the fast paced shots of Nellie swinging.

But this new lens came in super handy in shooting some shots of….

Sausage Sliders with Wickles Relish

Whole Foods is my go-to place when wanting to find over the top delicious food to serve to guests. We started by picking up some unique sausages.

The flavors of pork sausage included Jalapeno Cheddar, Habanero Green Chili, and Roasted Chipotle and Cherries (obviously these were for the meat-eaters in the house).  Chris’ brother, Gary, took over grilling duties, and then he sliced them up to use.

I toasted some slider buns in the oven to serve the sausage on open-faced.

Then I layered three slices of sausage on each bun.

Another amazing Christmas gift I received this year was Wickles Hoagie and Sub Relish.

It was an exciting new taste to add to these open-faced beauties.

There is one thing sausages cannot go with out, and that is mustard, Dijon mustard.

Bite-sized food is the best, and these were definitely a hit.

Where else can I go to find sausage stuffed with peppers and fruit? Whole Foods does gourmet well.

It was so nice getting to spend the weekend with Chris’ family. Time really does fly by, and I think it is important to cherish the time you have with your family. It has almost been a year since Chris’ grandfather passed away, but I find myself thinking about him a lot.

What an amazing man. He shared so much love in all of our lives.  He holds such a special place in my heart.
